The pork trotter, salted and aromatized, is another interesting gastronomic offering from the Pernigotti family. The same pork legs used to make cooked ham are immersed in brine and then deboned.
Cooking Instructions: remove from bag, place on a roasting tray, bake for 30–40 minutes at 200°C.The pork shanks are sealed in an aluminum wrap and baked for four hours at 80°C.
